I hope everyone had a wonderful Christmas. We have had a great Holiday season. Here are the highlights!

After Thanksgiving Bryan and I came home decorated the house and enjoyed Christmas movies! Yes, we have a Charlie Brown Christmas tree, but it is ours and we love it.

We had our annual bible study Christmas Party! We love these guys!

Bryan's mom and dad came to visit. We had a great time. We saw the Nutcracker at Bass Hall, went to Cowboys Stadium to watch my old High School football team play and win the State Championship game. (4th year in a row, Go Lake Travis!) We ventured to the Gaylord to enjoy the Christmas decorations, we ate some great food and enjoyed each others company.

For Christmas we headed to Houston. We spent Christmas at mom & Rex's house with Amber. We shopped and baked! Had an amazing time. We were able to rest and relax, which was much needed.

As we head into the new year I am so thankful for so many things throughout 2010. Friends, family, love and support. Ultimately, Thank you Jesus for your Sacrifice and the life, joy and love that you have given us!

The Vaughn’s love Shutterfly! We love everything about it; from their promotions, the cards, the calendars and their prices. We have used Shutterly for several years in the past. Every year we make a calendar for Christmas presents for all of our family members and we love creating photo books to display our pictures and put our memories into words, and I am also excited this year to hopefully use 50 free Holiday cards!

With the Holidays coming up I have been racking my brain about what gifts to buy family, what our travel plans are going to be and last but not least thinking about Christmas cards. Christmas cards are one of my favorite things about the Holidays. I love getting pictures and cards from people with updates from the previous year. It is neat to see the families grow and what people are doing year after year. Getting Christmas cards from Shutterfly would allow us to update and reach our families and friends during the Holiday season.

NC Friends!

(I know I am way behind with blogging...had a TON going on. But I actually wrote this after Eric and Anne Michelle left, but I just needed to go back later and add the pictures. Well apparently it took me 2 weeks to get the pictures so finally I can publish the post!)

This past weekend we had some great friends from North Carolina come and visit us! The Feyer's came and spent Friday - Tuesday morning in TX. They left their little girl, Addisyn at home with her grandparents. I felt like I was back in college; we did what we wanted and when we wanted. We ate out all weekend, enjoyed a Ranger baseball game, went shopping, stayed up late, slept in on Saturday and saw 2 movies! Perfect!

All in all we had a ton of fun and can't wait for them to come back. Or better yet...if they would just move to Texas! :)

This past week my mom rented herself a beach house in Holden Beach to WRITE! She is in her last year of school. Not much longer and we are going to have to start calling her Dr. Mom :) But, I just wanted to let everyone know that she is amazing! Not many people, actually, I don't know anyone else that can do what she does. This woman works a full time - FULL TIME job, works on her school work from like 9-2am, is the executive director of Rexanna's Foundation for Fighting Lung Cancer, a mom, wife, friend and soooo much more. That doesn't even scratch the surface as to what she does on a day to day basis. She is amazing and I am so proud to be her daughter!!

While she was out in North Carolina Bryan and I sent her a care package. We knew this was a huge week for her and that she needed to get a lot of writing done. So we sent her a few fun things and a friend to keep her company. Funny how the times have changed (daughter sending mom care packages)

I could not put this book down. Ask Bryan, for the past 3 nights I find myself sitting on the couch all night lost in this Historical Fiction book. If you are into Historical Fiction you should definitely read it. I do have to say it wasn't your feel good, pat you on the back book. The book fictionalized the 1942 Paris roundups and deportations, in which thousands of Jewish families were arrested, held at the Vel di Hiv and then transported to Auschwitz. Tied throughout the story about the Jewish families and their struggles and horrible treatment before their death is a story about a modern day journalist who is doing a report/column on this particular event in history for the 60th anniversary. Through her exploration, research and journey she becomes fascinated with Sarah's story and how things in her own life have actually intertwined with things that happened in the summer of 1942.
Awesome book.

The HOTTEST Half!

Honestly, the name should have given it away. But, for me and Emily we were brave and still signed up to run a half marathon on August 15th, 2010 in the Texas heat. I have to say, I really didn't think much of it since we have been training all summer in the heat, but we had been running before the sun comes up. BIG difference. I am getting ahead of myself, so I will start at the beginning...

The alarm went off at 5:00am. Wasn't too hard to get out of bed. I had butterflies in my stomach and I wanted to get up, take care of buisness, and have time to eat something. When all of the above was done Bryan and I headed to Dallas. We arrived at the lake where the race was about 45 minutes before the race started. Plenty of time to soak everything in, have one more quick bathroom stop, and get warmed up.

Check out the lines for the port-o-potties. Can you say disgusting. I totally did not want to use one, but I had too. I did not want to be stuck 7 miles out and have to use the bathroom. Moving on...

So the race begins. The gun is fired and we look like a bunch of cattle all being hurded on a sidewalk. There were probably a little less than a 1000 runners. Of course everyone is excited and start off full blast. Emily and I ran pretty fast for our pace, for the first 3 miles. BAD mistake. Lesson learned #1 - pace yourself, pace yourself, pace yourself. Otherwise you can use all your glycogen in your muscles and hit a wall. :( So we were off, needless to say I couldn't hang with Emily. She was feeling and doing great so I told her to go ahead and I would be behind her. I was already tired and out of breath. I knew this was going to make for a long race.

Anyways, I kept going. Making sure that I was stopping at every hydration station along the way to get some water or gatorade. After I reached the halfway point I was feeling pretty tired, HOT, and thinking "would it just be faster if I just ditched the race and kept going around the lake" "would it be faster than having to go back the way I came" "do you think one of these passing cars will just take me back to the start line?"

I had a few hiccups along on the way back. I was so thirsty I was drinking too much water at the stations and threw up 2 times on the way back to the finish. I reached Bryan with 3 miles left and I was ready to throw in the towel. I asked Bryan to just take me to the car. I was soo tired, hot, sick, and upset with myself that I wasn't doing the best that I knew I could do, time wise. It was also about this point where my new shirt had begun to rub my entire underarm raw. So I was having to walk with my hand on my side. Lovely, just lovely. Lesson Learned #2 - don't ever wear new clothes, shoes, socks ect for a race. Try things out in advance. I also, for the first time, changed out sports electrolytes that I use. I used Honey Sytingers for the first time versus my usual Sports beans. Needless to say, Bryan encouraged me to finish, I had already gone too far to quit now. Sidenote: I had already seen 3 people taken by ambulance off of the route. That should have been my first sign that this was not very smart to sign up for a half marathon in August.

Finished!!!! Emily was awesome! She had a great run despite the heat. She did great. Check her out finishing strong.

So basically, I felt terrible. My stomach was hurting so bad, I was sweting like crazy and I was so hot. I knew this wasn't going to end well. I told Bryan it might be a good idea for me to go and sit in the car in the AC. Well, I made it about 10 feet and just fell on the ground and puked my guts up. :( Bryan went and got me a medic and he came to the rescue. I ended up having to get an IV right there since I couldn't keep any fluids down and while sitting there getting the magic juice the Medic and Bryan poured cold water on my head and feet. After getting fluids through IV, I was feeling slightly better. After resting and getting some fluids and food once home I began to feel much better as the day progressed.

I like how my IV is just sitting on my shoulder! ha.

All in all it was a good experience. I finished the half marathon in 3 hours and 9 mintues. That is something to be proud of. I am have worked really hard to get to the point. I am looking forward to doing another one this fall once the weather cools off some. I will take all of my lessons learned, and come prepared for my next race.

Bryan's birthday was Monday and we celebrated with some friends on Saturday eating at BJ's. Gotta love that dessert! On his actual birthday just the two of us went to dinner and a movie(Salt). It was a great time, great birthday, great year! I look forward to this year and all that God has for Bryan and our lives. Happy Birthday!

Ahhh....Lake Travis

This past weekend I headed to Austin by myself for a meeting for Rexanna's Foundation. Bryan stayed at home since he had to play in the band at church on Sunday. Every time I go to Austin, I want to move back! It is soo pretty there. I love the lake and everything about Austin. I always seem to forget how pretty it is there, even though I lived in Austin for 7 years! ha. Bryan always says, "Didn't you live there..you act like you have never been."

Anyways...
I went with my mom and Rex to their friend's house. They have an amazing place right on Lake Travis. They are on the Lago Vista side of the lake - which I had never been - so it was fun to site see and actually see the other side of the lake. We spent Sunday scoping out land for sale and homes for my parents to buy, swam in the lake and then took a fun little boat ride. All in all, it was a fun little trip. I wish Bryan would have been with me, but we will just have to go back. And we might get to go back more if my parents will get busy and move to Austin. How fun would that be for everyone! :)

So basically I have had this post written and then added some more for a few days. I have just been so lazy to upload some pictures for it. Actually, I have been really busy and just haven't had the time to upload the pictures. I have had other things that have taken priority. Anyways. I decided - what the heck - I need to just post this, b/c I haven't done a post in forever and if I don't get it up now I might not ever. So, here is a little post about what we did on our Mini vacation to Orlando, Florida!

By far Disney World is one of my favorite places to visit. It never gets old, there are so many happy people and fun things to see, and it's one of the only places that you can be 26 (or 46, mom) and act like you are 5 years old and no one looks at you funny. It doesn't get much better than that. Amber, Bryan and I flew in to Orlando a few weeks ago to surprise Rex and have a little fun with the fam. Rex got manager of the year & and it was his birthday weekend. We had lots of things to celebrate! We are very proud of him!

Thursday night mom and Rex had a banquet so Amber, Bryan and I were on our own. We headed to Universal Studios. Bryan was excited - this is one of his favorite parks and places to go in Orlando. I have to say I was pretty pumped, since I am a big Harry Potter fan and I knew the new section of the park was open. Besides the looooong lines it was pretty cool and they did a good job with it!

Friday, ahh Friday, we went to Magic Kingdom. I definitely have to say this is by far my favorite park. I love everything about it! It was hot, but we had a good time and were able to get a few rides in and grab some food before meeting Rex for an awesome dinner at our favorite restaurant, Seasons 52. (For the record one is opening right by our house at the Shops of Legacy and we cannot wait)

Saturday we spent the day at Hollywood Studios. We ventured to the Hollywood Tower of Terror, the Rockin Roller Coaster and the backlot studios. We hit up the shops and saw a few characters. We really wanted to see the Toy Story stuff, but the lines were too long and we had dinner reservations with Rex. We met Rex at Antonio's for dinner and oh my. This was the best pasta I have ever had. Hands down, not even joking. Ask the rest of the family - I made myself sick, because I ate so much pasta. I couldn't even take 1 bite of dessert, because I ate ALL of my pasta. It was bad, I am ashamed, but it was worth it...I guess.

Sunday we headed home. (when I get a chance, I have got to post a picture of the car ride to the airport. To say the least, we were a little crammed. We had to hold 2 suit cases in the backseat! haha it was funny!) All in all it was an awesome last minute get away. We love going to Florida and it is even more fun when the whole family gets to go. :) Again Congrats Rex - we love you and you are AMAZING!!

Summer Reading Update

I thought this would be the perfect time to update you guys on my summer reading list that a posted about a month and a half ago. Here are a few of my thoughts about these books.

Take 3 By: Karen Kingsbury - For those of you who know me, know that I love, LOVE, to read Karen Kingsbury. Anything by her I can't wait to get and it is always read within a few days. Her books are a very easy read and about families that are so relatable. Anyways if you have never read a Karen Kingsbury book, I would highly recommend it if you are looking for a good, Christian, fiction book. 2 thumbs up for this book.

Take 4 By: Karen Kingsbury - Currently, I am in the middle of this one. The serious Take 4 has spun off several other of her series, but focuses on various families. Very good. So far it received a 2 thumbs up.

I am the Central Park Jogger By: Trisha Meili - This book was OK. I had never heard of the Central Park Jogger or the accident associated with it. It was actually just a book that caught my eye at the library and so I went for it. It was a terrible accident that a lady endured while running in central park. The book was the story of her recovery, the struggles and overcoming a lot of obstacles.

Fight Like a Girl: The Power of Being a Woman By: Lisa Bevere - I had a really hard time really getting into this book. So I stopped about halfway, due to lack on interest.

Strengths Finder By: Tom Rath - Awesome. Great book to see where your strengths lie and help you understand how to use those and work in groups or on a team more effectively. 2 thumbs up!

Crazy Love By: Francis Chan - Any Christian who is tired of being stagnant or lukewarm this book will challenge you! It was great! 2 thumbs up!

90 Minutes in Heaven By: Don Piper - This is a true story about a man who died for 90 minutes and went to heaven and then was brought back to life by the power of prayer. The man shares about his struggles and life back to recovery as well as his 90 minutes in heaven. Pretty neat book and perspective to hear about his experience with heaven. Worth reading. 2 thumbs up!

Same Kind of Different as Me By: Ron Hall & Denver Moore - By far this was the best book that I have read all summer. It was awesome! Description from the back: A dangerous homeless drifter who grew up picking cotton in virtual slavery. An upscale art dealer accustomed to the world of Armani & Chanel. A gutsy woman with a stubborn dream. A story so incredible no novelist would ever dream it. This true story is eye opening and encourage. So good. If you are too read anything from this list, pick this book. You will not be disappointed. 5 thumbs up!

Vacation come back to me!!!

Well as you have probably noticed, we have been MIA for the past several weeks. We have been on the go, but are finally back home. Ahh, Home Sweet Home! Every year we head to Holden Beach with my family. We always have a fabulous time laying on the beach, cooking dinners together and playing cards or Lord of Catan at night. This year Bryan and I were either on the beach or playing with the kiddos on this trip, while the other adults golfed or did homework(Bertha & Mom).

After 7 days at the beach we headed back to our old college town to visit with family and friends for a few days. We had a good time catching up with everyone. We stayed with Bryan's brother and sister-in-law, and they are always the best hostess and awesome at letting us have tons of people over :) Saturday when we got back from the beach we had a get together with several of our closest friends - grilling out and playing yard games. Fun was had by all.

Sunday for the fourth we spent the day with family. It was really great weather in NC. It was nice to be able to hangout and enjoy each other.

Monday we had an AWESOME day with Lee, Kasey and Bethany. Lee & Kasey took us all to Morehead City to the beach. We went out on their boat and headed out to Cape Lookout. I could not believe the water - I felt like we were in the Bahamas. It was so clear and gorgeous. I had no idea we were going to an island with a lighthouse. It was so fun. It was a great day, followed by a great seafood dinner! We had a great time and can't wait to go back!

Broadway Baby!

I love New York City. One of my favorite things about NYC is going to the plays. I love them. I haven't seen one that I didn't love. But my absolute favorite is Wicked! Wicked's broadway tour had been traveling across the country and has finally made it's way to the Big D. This is my 5th time seeing it and it never gets old. It is official. I will be tackling The Hottest Half with Emily Barry on August 15th! This will be my 1st half marathon and I am pumped! The nice thing about your first race is there is no pressure of beating a certain time or getting a so called PR(personal record). I just have to FINISH!! and be able to blog about it, right? :)

Summer Reading

Well I have to say that I have throughly enjoyed being out of school. No deadlines, pressures of writing a paper or studying for another test. The past few weeks all I have done is read! I don't think I have read a book for pleasure since last summer. It has been so fun to get back to reading; what I choose to read versus what I am told to read! A few weeks ago Michelle Dameron posted a great blog about summer reading and I thought it was a great idea! I hope you don't mind Michelle, but I wanted to post my summer reading list as well. Not only am I posting this for my reading "goals" this summer, but I need some feedback for some more books to read. Is there a book lately that you read and just could not put down? Did you get lost in the last book you read? Have you read a book that changed or challenged your life? If so I WANT TO HEAR ABOUT IT!! (please)

UTA Graduate

May 14th we had a great time with ALL of my AWESOME family members. Graduation was held in Texas Hall at University of Texas, Arlington. It was a nice, simple ceremony. Besides the terrible weather that day I could not have asked for a better and more exciting day. After graduation we had a little party at Cantina Laredo(YUM)! Thank you to all my family who traveled near and far to come celebrate this fun day with Bryan and I. We love you and are so grateful for a wonderful and supportive family.

The Times are Changing!

Holy Cow. First off I have to admit about 3 maybe 2 years ago I didn't touch vegetables. Yes, I would eat green beans, and yummy potatoes, but that was about the extent of it. I would not touch corn and you were definitely not going to get me to eat zucchini, squash, onions or carrots. I was not going to do it. Well I am proud to admit that I have grown up a whole lot. I really do believe my mom now...She always used to say that her taste buds changed as she got older and now I believe that is a definite fact! What's funny, is that there are a few vegetables (mushrooms) that Bryan doesn't like and I have found creative ways to get them in our food without him knowing! Sheesh - so I went from not touching vegetables to now hiding them in our food so we are getting all our servings of vegetables! My my how the times have changed.

So enough talk - Who's ready for dinner?!

Lindsey's Lettuce Wraps & Quinoa :)

Ingredients:
Bib Lettuce
1/2 lbs Ground Turkey
Several whole fresh Mushrooms
Handful or 2 Baby Carrots
1 small can of Water Chestnuts
Low Sodium Soy Sauce
Hoisin Sauce (you can find this and water chestnuts in the Asian food section of your grocery store)

Directions:
Lindsey's Lettuce Wraps
Cook ground turkey on stove, while turkey is cooking you will want to get your other ingredients ready. Mushrooms, carrots and water chestnuts all need to be chopped in a food processor or food chopper. I chop each ingredient separately. Now here is where the trick comes in! (You want the mushrooms and carrots chopped really really really GOOOD!! Once ground turkey is completely cooked, mix in chopped mushrooms, chopped carrots and chopped water chestnuts. (So when all these yummy chopped vegetables are mixed in with the ground turkey - one should never know they are eating so many servings of vegetables - yes, the carrot color might give it away, but just say it is a spice if you have to! Moving on..So now you have all the vegetables and ground turkey mixed together and you will want to use about a 1/4 of a cup of hoisin sauce. Mix sauce with turkey and other ingredients. Then add soy sauce, 1/4 cup. I absolutely LOVE soy sauce - so I don't think you can ever not have enough. So really just add the hoisin and soy sauce to your liking. Start small, sample it and add more if needed. FYI: the hoisin sauce will go a long way, so you will not need a lot. Next, clean your lettuce and serve.

A good little side with the lettuce wraps is Quinoa. Cook based on directions on bag :) I also mixed soy sauce in with the Quinoa, because it is pretty bland by itself. But let me tell you it is a great source of protein!

Here is another great flavorful recipe for you. (Side note: spices, herbs, seasonings are what it is about..When making healthy meals you can cut fat and extra calories without lacking flavor..if using those items.)

Margarita Grilled Chicken, Fiesta Rice & Black Beans

Ingredients:
Chicken
Tequila Lime marinade
1 can of Black Beans
Brown Rice - We tried the minute brown rice "ready to serve" - already in individual servings
1/2 can of Rotel Tomatoes
Cilantro

First I marinaded the chicken all day. We enjoy grilling the chicken. Gives it a great flavor! OK. So you have your chickens grilled now you must get the rest of the meal prepared.

Black Beans
Warm them up! Ready to serve.

Rice
So considering I went the easy way - all you have to do with these individual rice cups is put them in the microwave. After the rice was heated I mixed the majority of the Rotel tomatoes into the rice. (Save a little bit of the Rotel for the chicken) Finely chop cilantro and mix into rice. The Rotel and Cilantro gives great flavor and zest to your boring rice.

Lastly - plate your food and top the chicken with Rotel tomatoes and Cilantro.

Eat it up!

There are many nights after a long day at work or a long day of classes that neither Bryan or I want to cook. Sunday or Saturday we always make a schedule of our weekly meals - so it is hard to justify going out to eat when we have all this food at home waiting to be cooked. So, we have a Go To meal. By this I mean, if we have nothing else in the house 9 out of 10 times we will mostly likely have ingredients for Mexican food! It is a staple in our house, 1. because it is so quick and easy to cook, and 2. it is easy to make a few tweaks that make it a healthier meal as well.

Mexican Tacos
Ingredients:

Ground Turkey or Ground Veal - these are much leaner than beef
Old El Paso Taco Seasoning
Tortillas (I opt for Flat Out Wraps b/c I don't feel regular tortillas are worth the extra calories & with the Flat Out Wraps I use one and cut it in half and it makes for 2 soft tacos)
Salsa - always keep this on hand! :)
Fat Free Old El Paso Refried Beans
Chips (remember to look at the serving size - usually 12 chips!)

Yummy Table Side Guacamole for 2 people (this is a great filling food!!)
2 Avocados
1 Sweet Onion
2 Roma Tomatoes
1 Bundle of Cilantro
1 Lime
1 Lemon
Garlic Salt

Taco Directions:
Cook desired meat until done. Add taco seasoning to cooked meat and stir until all meat is covered in seasoning. Heat refried beans in the microwave - takes about 2minutes to get them hot. And then place tortillas of choice in the microwave for 20 seconds. Spread refried beans on tortilla, place meat on top of beans, and cover with salsa. You can always put cheese on these - I usually opt out just to cut the calories. It's your choice though! Enjoy!

Guacamole Directions:
Cut open guacamole and remove avocado from shell. Remove seed and place in a bowl. With a fork mash guacamole. Place onion in food processor until it is sliced into small pieces. You will also want to put the cilantro, and the tomatoes in the food processor as well. Mix everything together in a bowl; avocado, cilantro, tomatoes & onion. Lastly, cut the lemon and limes in half and squeeze the juice into your guacamole and stir. Final touch is to put garlic salt in and mix - probably will take at least 1 tablespoon.

Feta Turkey Burgers & Potato Fries

Ingredients:
1/2lb Lean Ground Turkey
Sandwich Thins (we use these instead of a regular hamburger buns)
Fat Free Feta Cheese
2 potatoes
Oregano
Basil
Garlic Salt
Onion Salt
Pepper
Olive Oil

Directions:

Turkey Burger -

Combine ground turkey oregano, basil, garlic salt and feta cheese and create into patty. (I don't measure the seasonings, I just add till I think it is good :) These seasonings have a lot of flavor so you do not have to over do it with them. Once patties are ready, place on grill about 20-30 minutes until done.

Potato Fries -

Clean 2 potatoes and cut both potatoes into very thin silvers/slices. When done place all silvers/slices into a bowl and add a small amount of olive oil. Maybe 2 tablespoons of oil. (You will want just enough oil to help all the seasonings stick to the potatoes) Use your hand to mix all ingredients and to make sure potatoes are covered with oil. Next add oregano, basil, garlic salt, and pepper to bowl. Mix all with hand, making sure to coat all the potato slices with seasonings. (I probably used at least 1 to 2 tablespoons of each seasoning) Place aluminum foil on baking sheet and cover with pam. Spread the potatoes out over pan and cook at 400 degrees for 40-50 minutes, or until desired crispiness.

As I was sitting at my desk today I felt desparate. Desparate for hope, for a word from the Lord, for a peace in my soul, comfort and encouragement. Not really knowing what to do with myself...where to read in the bible, where do I even start to pray, what music would set the mood ect...I just sat there staring into abiss drinking my coffee. Over and over again I would bring the cup up to take a sip. Then it caught my eye.. TRUST

Really that was exactly what I needed. I am not saying all of my problems and things we are dealing with right now just disappeared into thin air, but ultimatly I need to let go and trust God - FOR EVERYTHING AND IN EVERYTHING. It is about learning to walk out difficult things, but trusting the Lord and His will.

5 Weeks

Holy Cow, only 5 more weeks until I walk across that stage with my LMSW, Licensed Master Social Worker!! (well I take my license test in a few weeks, but I am speaking pass..pass..pass over me!) (I will update yall when I take that! oh yes, and I am keeping it a secret as to when I am taking it, because I don't want to freak myself out and put too much pressure on myself!) It will be just another day and then party afterwards! ha! As this season of my life comes to an end I am so thankful for the opportunity to be able to further my education and move one step forward to my dreams. I am Thankful for the support of Bryan, and we could not have made it without the help of my generous, amazing parents. THANK YOU. Thank you friends and family for your support and encouragement throughout this process. It has been a long, hard process of finishing this, but now as I sit on the edge of something great I am so excited for what the future holds for me and our lives! I know I have been few and far between with getting posts up here, but I have to finish strong!!! 2 tests, 1 video, 3 papers left!! Woah! So less on the TV, facebook and other social media outlets for the next 5 weeks, so this girl can walk across that stage come May 14th!

For Spring Break we headed to Cancun, Mexico! I was hesitant about going to Cancun especially for Spring Break. I didn't want to run into any girls gone wild mess! But let me just tell you, Playa Mujeres exceeded our expectations. We were on the Northern most tip of Cancun and not anywhere near the tourist attracted area. Only our resort and its sister resort were in Playa Mujures. Our days were spent laying by the pool, phones off, reading books and relaxing!

This was our room. Nice King size bed, couch to chill and watch TV, large jacuzzi in the room, balcony overlooking the pool with a large bed thingy (where many naps were taken!) and a mini refridgerator stocked daily!

Now to the food...Oh man...We ate till our little hearts desired(I am going to pay for it now, but it sure was nice at the time)

Playa Mujeres Preview!!

Today has been a movie kind of day here in Cancun. It has been raining all morning, but it isn't stopping us from having fun! We have been watching movies, ate a yummy breakfast, (it gave me some time to work on my paper!) and has given us time to relax and give our skin a break from the sun. Later we are going to hit the gym, possibly take a bike tour if the rain lets up and check out the game room!

This place has been fabulous. Not one thing to complain about. Not a care in the world! It has been so great to catch up on R&R and enjoy some quality time together. We would recommend this to anyone!!

Needless to say I have not gotten a lot of sleep the past 2 nights. For those of you that really know me, you know that I need sleep. (That means at least 8 hours preferably 9 hours!) But between Monday and Tuesday I have had 3 tests. I am happy to say that I did survived them...only to look like I got hit by a mack truck! I couldn't even get my body off the couch today to go outside for a run. And we haven't had weather as nice as this in a LONG time! Taking a nap was much more needed, I guess. Anyways, that is enough of yall hearing about my "tough" few days, but I wanted to share a "first" that I experienced on Sunday night.

A little background: So, it is interesting what you learn about yourself when you get married. Bryan learned that he GRINDS his teeth. I am the hardest sleeper in the world, but lately I haven't slept all that great. When I lay down to sleep I think of the million things that I have to do with the race or stuff that I have to do with school. With that being said, Sunday night, I was going to bed late, from studying, and since I can't fall asleep in 2 seconds flat, which normally would not be any problem. Since I couldn't fall asleep fast, and Bryan had been asleep for several hours already....all I hear was Bryan GRINDING his teeth. Oh man...to make a long story short, after a lot of kicking, hitting, yelling, ear plugs I ended up here....

Here's to better sleeping the rest of the week!

Weekend Fun!

This Friday we had a fun night with our friends Ross & Emily. Ross and Emily go to our same church and we are in the same marriage bible study together. We have thourouly enjoyed getting to know them as a couple and individually! They are so much fun to hang out with! So, this Friday was Emily's birthday!! Woohoo! We met them for dinner in Dallas and wow, let me just say they open our eyes to food, new things and places! :) I love it and I am amazed at how brave Bryan has been! (Debbie you would not believe the things your son is eating :) So anyways, we went to Emily's pick and ate some awesome food! We ate at Teppo Yakitori & Sushi Bar By far, this was some of the best Asian food I have ever had. We had sea bass, grilled rice, california rolls, spicy tuna & salmon rolls and we even tried salmon shashimi! This was raw and as fresh as salmon could be. It was so good & fresh it tasted like it was cooked. Bryan even tried it and liked it! :)

Needless to say it was great and we enjoy having Emily and Ross who stretch us to eat more than just Mexican food!

Completed Day 2 of The Shred!

I am so loving the shred. From the responses I got, it seems like yall like it as well. At first I was all about doing it straight for 30 days, but doing that on top of my other work outs was too much. So I tweaked it and on the days I just run I will do the shred! We shall see.

I have definitely come to the conclusion my biggest downfall with eating right now is from 2:30-5:30pm. I feel like I am sooo hungry. (1/2 the time, not the case!) Or I am bored. So I will just venture to the kitchen and eat and eat. Thank goodness we don't just buy junk or I would do some damage in there. But it is still excess calories that I totally don't need. And half the time I AM NOT HUNGRY! oh my! But, I don't have this problem when I am working or while I am at class I will take my lunch and I am totally satisfied. What in the world? I hate that. Breaking habits aren't easy..Man...Any suggestions!? Do you guys struggle with this?

New Chapter Begins

I have had a few rough weeks with my workout routine and eating right. So today is marking a start of a new day. I definitely have hit a plateau and I am ready to break that wall and get to my major goal weight. I have 8 more pounds!!! Only 8 more. (they seem to get harder and harder to come off...but I am not giving up and I am staying positive) So I am putting all of this out there for accountability and encouragement! :) I figured since the 30 Day Shred is hardcore I am going to really back off of sweets - totally if possible for these next 30 days. I want to really focus on my body and it is not worth kicking my butt and working so hard if I am just canceling out workouts with junk!!!

All of this to say....I am pleased to announce that I have officially started the 30 Day Shred!!!!!

Along side of training for the 1/2 marathon I really have wanted to get a good strength and weight routine going. After watching the Biggest Loser I secretly have wanted Jillian as a trainer. So when I saw this video, I have had high expectations. I will keep you updated along the course of this 30 days of how it goes, weight lost, work outs completed, how I am handling without sweets, how sore the shred makes me and more!

Well I would say that we had a serious snow day in Dallas Texas! Wow it has been crazy. Bryan woke me up at 6am this morning and told me to go look out the window. It has not stopped. It is still going strong outside. We haven't been in a snow "storm" like this in who knows when.

I have a thankful heart!! I am thankful for my family!! And thankful that my Papa's heart is on the mend!!! (and thankful that my aunt Susie's surgery went well too!)

As most of you know I was in Missouri this past week with my family. My grandpa found out he had to have open heart double bypass surgery. So my dad, his wife and myself made the looong 9 1/2 hour trip up to Missouri. He had surgery on Thursday and it went great. Everything went perfect and he is doing so well. They have him up and walking and preparing to go home soon.

Crazy Life!

Please be in prayer for my grandpa. (This is my dad's dad.) Tomorrow he has open heart, double bypass surgery. My dad, his wife and I are leaving today for Missouri, to go and be with the family. It will be a crazy short trip, but thankful we can make it.

So it has been a long time since I have had a blog post. Wow. I almost forgot how to do this. Latley we have just had a lot going on. The in-laws are coming in town for this weekend! yay! I am directing a 5Krun & 1mile walk on March 27th(soon). I started back to classes(last semster. yay!) And much more. But it is all good! So there will be more post soon, but as I was going through my email and found these pictures. Our dear friends Eric and Anne Michelle Feyer had a baby last year. Here is sweet Addisyn when we were able to visit them this past October!

Well, if you read our last blog post you would know that we are participating in a week long fast. It begins tonight at 6pm.

I am excited about getting back the zeal, fire, love, and relationship. I want more. I want to go deeper and I want what God had for me, our family and our future. So this week we will be cutting off the TV, signing off of facebook, twitter and the blogworld, putting down the novels, and put God first and foremost in our lives. It isn't going to be easy, but it wouldn't be called a sacrifice if it wasn't easy.

What are your hopes and dreams? What areas in your life are you still hanging on to? What has taken the place of quiet time lately and where are your priorities?

I pray that through this next week that God will reveal his heart to us. I pray for clarity, and revelation. God we give you all the glory and honor that you deserve.

What better way to start off 2010, but with a fast. Our church, Trinity Dallas, will begin our church wide, corporate fast on Sunday January 10th. Join Bryan and I as we seek the Lord, in prayer, the word and worship. I am so excited about this fast. A much needed week of renewal, refreshing and revelation. Getting back to the basics, our foundations, our first love. I pray that you will join us as well and be empowered, and renewed!

Guidelines for Corporate Fast
1. Skip at least one meal daily. Use that time to read your bible and seek the Lord.
2. Unplug your television, Internet, and video games. (No blogging, no facebook, email, ect..)
3. Put away your newspapers, magazines, and novels.
4. Participate in nightly meetings & noon prayer meetings as much as possible. (If you don't live in the DFW area you can join us online at www.trinitydallas.com or just make it a point to attend a church in your hometown on Sundays)
5. Participate in one of our community outreaches. (We have several community services choices for us, but get creative in your hometown. Volunteer at a local nursing home, homeless shelter, hospital. Clean a neighbors car for them or mow their yard. Basically, help someone that has less than you!)
6. Formulate a stewardship commitment for 2010.

2 Years!

I can't believe that Bryan and I have been married for 2 years! It has flown by. I will never forget that special day, December 29th, 2007. I married the man of my dreams. I am thankful for the past 2 years and very excited about our future!

We had a fun night celebrating 2 years of marriage! We stayed at the Hotel ZaZa. It was a fun and wild experience! If I could describe the hotel with 3 words it would be, sheek, modern, eccentric!

Thankful for 2009 & Here's to 2010

I have gone back and forth about what this next blog should consist of. Nothing profound is coming to mind just this second (go figure), so we will take a stroll back through 2009 and say hello to 2010!

Looking back through pictures and blogs of the year is so fun. It is crazy how much we have done, what all has happened and transpired, as well as to see the growth!

10. Family and friends trips to Texas! We enjoyed several visits from friends and family this year. We are thankful for Lee & Kasey's trip to Texas. We enjoyed taking them to a rodeo, eating some great food and catching up with each other. The Vaughn's made it out to Houston (Dave, Debbie, & Bethany). We caught an Astros game, had a wedding shower, and hung out by the pool. Some of our best friends from North Carolina made it out. We went to the 6th floor museum, Rodeo, Dallas aquarium and caught a Rangers!It was so great, we constantly miss our friends and family back home so whenever they are able to make it out here it is definitly a treat for us.

9. Our annual beach trip to Holden Beach. We will definitly look forward to this trip every year! I miss the beach like crazy!

8. Some of our closest friends gave birth to sweet babies this year! We are excited to be a part of their lives!

7. My husband's band released their first C.D. this past year called The Well. (Let us know if you want one!)

6. We had our 3rd annual Rexanna's Foundation Huddle Up. So much has happened as a result of the foundation; lives are being touched, people are becoming more aware of lung cancer and its effects, and funds are being given back toward research. We are very excited about several events that are coming up this year for the Foundation.

5. 31 lbs GONE!!!!
Many of you know that I have been doing weight watchers. No shame here. It has taught me so much about myself and bad habits that I have learned over the past 25 years. I am taking it one day at a time, but I feel fabulous. Better than ever! 2010 is the year of hitting my goal weight!! Before and after pictures to come at goal!

4. Bethany & Nick are married!!! We had a great trip to North Carolina to celebrate Bryan's sisters' wedding. I am so lucky to have gained a great sister...(2 great sisters - Kasey & Bethany!) I love them! :)

3. Joining a small group was definitly a highlight of the year. The first year here, we were still searching for a church and after joining Trinity Church Dallas due to schedule conflicts we were never able to get involved. Since then, Bryan has joined the worship team and we have joined a small group. We are so thankful for the group of people that we have met through this group. We are so thankful this year for new friends that we have been able to get to know more. We had some rough and lonely months last year. I think we questioned everything in our lives and even God. It was adjustment leaving Greenville and all of our best friends that we had grown close to over the years. It was hard to move away from Bryan's family as well.

But I am here to say, that God is faithful. It has taken awhile since moving, but we feel like we are on the right path. Our prayer at the start of this year was Lord, just give us friends! I didn't think it would be so hard meeting new people at church. It has definitly been an eye opening experience. It has made me want to remember to look around during the service and see if someone looks like they are sitting by themself or not being talked to. I encourage you this year to get out of your comfort zone and step back from your "group" of friends and think about others. We never know what other people are going through. Invite people out to lunch with you, invite them to your Christmas party or send them a card in the mail. Small things such as these remind people that you are thinking of them. Hear my heart, I am not saying forget your old friend, but there is always room for new ones.

So thank you small group and the people at Trinity Church Dallas who have helped to make us feel welcome and a part of something here in Dallas. Thanks Jess and Seth for the support through that first year and on!

Peanut Butter Blossoms!

Love these cookies! They are an easy fix and great for any party!

Kisses!
1/2 cup shortening
3/4 cup Peanut Butter
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Granulated sugar

1. Heat oven to 375°F. Remove wrappers from chocolates.

2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.

3. Shape dough into 1-inch balls. Roll in granulated sugar; place on cookie sheet.

4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely.

OR......

You can buy a package of Betty Crocker Peanut Butter Cookies.

1 Tablespoon water
1 Tablespoon oil
1 egg

1. Mix all ingredients together.

Beginning to Look a lot like Christmas!

Well, I have to admit that the Christmas season is my favorite time of the year. I definitely have an extra pep in my step through the month of December! I love sitting on the couch by the light of the Christmas tree drinking hot chocolate, while watching Home Alone!

We have been busy since Thanksgiving getting the house all decorated and ready for the Holidays. I am extremely excited, because as of this past week, I am officially done with classes and my internship. It was a great semester, and I had an awesome experience at the Children's Hospital in Dallas, but it is nice for a break. (And to know that I only have 1 more semester left of school- 4 classes and I will be graduating!!!) In the mean time I will be back working hard for my sister-in-law (Burns & Wilcox) and hopefully finding some time for stuff I have desperately been wanting to do.(scrapbook and read for fun!ha)

On that note, check out the pictures of some of the decorations. As always don't forget to remember the reason for the season. (yes dorky I know, but so true!)

Here are some close ups of a few favorite ornaments. It is so hard to pick just one. They all mean so much too me. I could probably tell you where each and every one came from. Each one is very special. The first one just cracks me up..It is a little gnome sleeping on the moon. I fell in love with all his hair! ha. He is from Norway in Epcot @ Disney world. The second one has a little bride and groom. Our anniversary is the 29th, during our favorite season! We had a wedding shower where eat guest gave us an ornament. So sweet. And the last is a picture of a cross. Bryan's mom has started giving each of the kids these special crosses every year during Christmas. Very neat. (Have I told you I love traditions!)

How could I forget!!! We had snow Wednesday!!!!! It was pretty much amazing! Here are a few pics from the morning. (Have I told you snow is one of my favorite things ever?)

Once again it was another great Thanksgiving. We had so much to be Thankful for this year; friends, family, our home, school almost over, the break, our health, God's provision, bible study, and much more. Mimi cooked a great Thanksgiving dinner. (I just have to brag on myself a sec...this was the first year/holiday, probaly in my life!sad! that I was not miserable after eating lunch or dinner) I have turned a corner and I am on my way to my goal weight! Even with Holidays! We enjoyed the much needed break by sleeping in, working out, reading for fun, and playing a bunch of cards.

This year we made the looong drive to Marshall, Missouri. It took us 9 hours! Whoa! I haven't made that trip in a long time (not by car anyways!) We had a great time visiting my Dad's side of the family. Here are a few pictures from the trip.

Well folks it only took 447 days to break Bryan in!!! Today was a big day, Bryan got his first new pair of cowboy boots. (I think he likes them, he hasn't taken them off at home yet!) He's lookin pretty good!

As most of you know earlier this month Bryan's Papa passes away unexpectedly. None of us expected this. It was hard getting that phone call, we couldn't wrap our minds around what was actually happening. Questions begin running through your mind..I wish I was there, just one more time to see him, one more phone conversation, one more hug. Why do we always want things even more when we don't have them or they have been taken away? When things like this happen I always seem to start questioning God...why? I am coming to the realization that sometimes we will never know why, but we have to have a peace that surpasses all understanding, find comfort in God, trust Him and know that His ways are best, and that He loves us no matter what.

At Papa's funeral the entire message was about Papa's legacy that he is leaving. The legacy that is left through his wife, his children, grandchildren and the generations to come. Papa left a legacy. His work ethic, love for God and his family many times overflowed to the people he met and his family.

Nicole Nordeman's song I Want to Leave a Legacy comes to mind.
I want to leave a legacy
How will they remember me?
Did I choose to love? Did I point to You enough
To make a mark on things?
I want to leave an offering
A child of mercy and grace who
blessed your name unapologetically
And leave that kind of legacy.

Papa left this legacy and this is something that we all should want to leave. Questioning God's ways never seems to get me anywhere. I always end up going around and around in my head...why..why.. Today is the day to stop questioning the maker of heaven and earth. Today is the day that we turn to you God, for strength, faith and hope. Renew and refresh our family with a new sense of purpose and hope to wake up each day and look to you first. We stop the voices in our heads that question your ways. Thank you God that you are the Father of compassion and the God of all comfort. You comfort us in all our troubles. Thank you that you sustain us Lord. Thank you for fulfilling our lives. Thank you Lord that your mercies are new every morning. Lord I pray that this family draw near and dear to you in this time. Clothe us with joy, Lord. Help us to live a life like Papa, a life that leaves a legacy when we are gone.

Well, I have to be honest. There have been a few bumps in the road with my Pumpkin Challenge. First, I have not been able to make something with pumpkin every weekend. Second, several of the recipes I have tried, have not been very good :(. I almost quit my own pumpkin challenge last night, but figured I could extend the pumpkin challenge to any and everything dealing with pumpkins! (Hey it's my challenge, my rules!)

So...the challenge continues. We carved our pumpkin last night. Bryan and I always make a good team and have a lot of fun making our pumpkins.

Hello everyone! Hope you guys have had a great week. Sorry it has taken me so long to post about my pumpkin journey. But here goes...

Pumpkin Dip!

(sooo sooo yummy!) a coworker brought this up to work, so I searched for the recipe and found it. You have got to try it out. It is pretty sweet, but good. It also makes a lot, so be prepared or make it for a party!

Ingredients:
1 8 oz package of cream cheese
2 cups of confectionary sugar
1 15 oz can of pumpkin
1 tablespoon ground cinnamon
1 tablespoon pumpkin pie spice

Blend cream cheese and confectionary sugar until mixture is smooth. (I couldn't get out all of the cream cheese bumps, but I thought it was ok)
Gradually mix in pumpkin.
Stir in pumpkin spice mix and cinnamon.

Serve with ginger snaps or graham crackers!

BOOO! Ha! I guess I was in denial all week about having to work from 7am - 7pm today. Hopefully this will be my last weekend having to work these type of hours, but who knows. And hopefully it will go by fast!

Right now we are very slow...or actually all morning it has been slow. Haven't done a thing. (I guess that's a good thing at least for the kiddos!)

Facebook is blocked, so that pretty much stinks. I could have definitely wasted a good couple or 5 hours on there!

But, I better use this free time wisely, considering I have a paper outline due Wednesday that I haven't even started and a take home exam due Wednesday. (but we all know that blogging and facebook is much more entertaining than homework)

Well off to work on my exam until the pager calls!

FYI I was given this awesome email that has tons of crock pot recipes. Basically the recipes are listed by chicken, pork, beef, ect. You click on the meal that sounds appetizing and then it opens the recipe. Let me know if you are interested send me a message with your email and I will get that too you! It's pretty cool!

Pumpkin Freak!

That is exactly what I have turned into. It all started with Starbucks carrying their pumpkin spice lattes again. (tall, non fat milk, no whip, 1 pump, extra hot) That's how I prefer it! :)

So, needless to say that has sparked this pumpkin frenzy! And to be honest, I am loving it! My goal is to become the ultimate pumpkin freak. To reach this goal every weekend bake/eat/drink/cook/try/or buy something that deals with pumpkins!! I will post this pumpkin journey for all to see and become a part of!! Please join in on the fun and let me know what pumpkin stuff you try out!!!

First pumpkin weekend = PUMPKIN BREAD! YUMMMMM
(for all you awesome weight watchers..3pts per serving)

Ingredients!

3 Cups Sugar
1 Cup cooking oil
4 Eggs (I use egg beaters)
3 1/3 Cups all-purpose flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
2/3 Cup water (don't mistake for 2 1/3 Cups..just words of wisdom!ha)
1 15oz can pumpkin

Heat oven to 350 degrees.
In a large mixing bowl beat sugar and oil w/ electric mixer. Add eggs and beat well.

In a different large mixing bowl combine flour, baking soda, salt, cinnamon, and nutmeg. Alternately add flour mixture and water to sugar mixture, beating on low speed.

After everything is combined, beat in pumpkin.

Pour mixture in whichever pan suits you. I used a muffin pan, 1 loaf pan as well as a fun muffin pan.

Bake 55-65 minutes or until a wooden toothpick is inserted near center come out clean.

Then eat and enjoy!

So Bryan woke up sick Thursday morning, worked half a day and has been home laid up ever since. We went to the doctor Friday. We usually wait till we feel like we are dying to go to the doctor. But not this time. We were going to do the right thing and go to the doctor right away in hopes this would help. The doctor did the strep. and flu test. (If you have to get the flu test be prepared..they stick a huge q-tip up your nose till it goes to the back of your throat {glad it wasn't me} !!) Well doc said both tests came back negative, but he said Bryan probably has the flu, but just caught it early! ha. So I guess that's a good thing, who knows! Hopefully the fever, body aches, sore throat, scratchy throat and headaches will go away soon and I will not be infected! Poor thing.

Sorry for not posting in a million years. We have been crazy, busy at the Vaughn household. Currently I am doing my 2nd field placement for grad. school. I am working at Children's Medical Center in Dallas. It has been amazing! I am loving every minute of it and learning sooo soo much! I am following/working with trauma, orthopedics, and urology kiddos. (Which I love) I am even more excited to do be done with school and working! So why so busy you might ask yourself...I spend a minumum of 35 hours at the hospital every week, have 1 night class in Arlington, and then work about 10 hours for Burns & Wilcox! Somewhere in between that I have to find time for blogging, homework, working out and of course my sweet husband. Good thing, maybe, he is just as crazy right now with schools starting back up. He is in charge of all of the class meetings for ring and senior presentations. (And does an amazing job!) But they have lots of parent nights throughout the week and they early mornings up at the school to sell rings right now! So needless to say when we do spend time together lately it has got to be quality! :)

This past weekend Bryan went to Austin with VCM for their fall advance. He was so excited and came back and shared amazing testimonies of the weekend and great things that God was doing in these zealous college students lives. It was so fun to hear about.

Besides that, we are just looking forward to getting involved with a small group this semester at our church. That should be starting really soon. We are hoping that Bryan's family will be making a trip out here soon to visit! And last, but not least, I have hit the -25lbs mark. Yes, it has taken me forever it seems like, but I am just taking it 1 day at a time and learning throughout this entire process. It has defintly been worth the process and I never want to be back at that weight again!!! I am so excited about where I have come from and where I am going! Right now my goal is 14 more lbs! I will keep ya posted on how that continues to go!!! By the end of the year I should be where I want to be! Yay!!! Think that is all the news right now.

Bryan and I had a great weekend with Bryan's brother, Lee and sister-in-law, Kasey. Their flights got changed so they got here Friday morning. Kasey and I had to work and Bryan took Lee to see his office and around Frisco. Friday night we introduced Lee and Kasey too La Hacienda! YUM! All I have to say is that we killed some queso! (This weekend was not very conducive for my weight watchers!!) Saturday we slept in. Man, did that feel good! We all slept in and spent the day in Fort Worth. We enjoyed walking around Sundance Square, and then enjoyed the Rodeo at the stockyards. Sunday we got to take them to our church, which was fun for them to see where we have been going and then did some shopping! oh yea! Basically our weekend consisted of a lot of eating, a lot of shopping and a lot of laughing! What more could we ask for.

We dropped them off at the airport this afternoon and we are already looking forward to their next trip out here. It wasn't our annual Labor Day New York trip (which we all will be doing next year :) But it was great!

On Sunday it was my amazing, sweet husband's birthday. We had a great time celebrating his birthday. He desevered a day all about him..He is always thinking of other people and putting their needs and wants before his. He is great and I am so thankful for him to be my husband.

VACATION!!

Wow..Bryan and I had an awesome week in North Carolina off of work. We left bright eyed bushy tailed at 4:00am Saturday morning. (By the way..every time we say, "we are not going to take the early flight ever again" never fails we always book the earliest..earliest = cheapest!) Anyways. We got to NC at between 10:30/11:00 and headed straight for lunch, w/ Bryan's family. We ate a great lunch at Cameron Village and went in the cutest store, Hand Picked. When we were done with that we headed back to Wilson for Bethany and Nick's couple's wedding shower. We had a blast playing games, watching them open presents, and visiting. (I don't have any pictures..because I was too busy taking pictures with Bethany's camera!) Anyways..moving on to the beach!

We left early Sunday morning and headed straight for Holden Beach. I felt like a little girl in the car ride there. I could hardly wait to get there. We made it and I think I had my bathing suit on and was in the water in 5 seconds flat! ha.

Here is a few view of Mermaid's paradise. We loved all of the decks. It was nice to sit and dry off on the rocking chairs, or just grab a book and relax.

So I don't go on and on and bore you..here is the quick recap of our week. Bryan and I kicked butt and ran 3 miles everyday except Saturday and Sunday. For the most part every day you could definitely find us sitting on the beach, or in the sand! We played a lot of bochee ball sp? The best was coming back from the ocean and taking a dip in the pool. It was so refreshing. We saw transformers, went shopping at the outlets and ate at provision company twice! yumm shrimp burgers! We took a boat ride with Lee and Kasey, went tubing and hung on for dear life. Ate good home cooking; provided by the Spain's and Halfmann's. We ate some real good shrimp cooked by my Papa. We played a ton for Settlers, Bertha dominated. And enjoyed us some hand and foot. All in all we had an amazing week and cannot wait for next year!

Go Rough Riders!

Last weekend we walked to the Rough Riders baseball game and had a great time. The Rough Riders are a minor league baseball team that feed into the Texas Rangers. It is really cool to have a minor league field only a couple of miles from our house. It made for a great Sunday!

We found this great lil park on the way to the ballpark. So cool. It is a memorial for the Shawnee Trail. Really neat.

Well, I haven't actually come close to what those people lost on the biggest loser or near as fast as it happened for them, but....Last Tuesday I hit the "lost 15 pound mark!" I am really excited and feeling so good. It's nice when your clothes actually fit you right and aren't just tight! ha. I still have a long way to go, but Bryan and I are getting on the right path of eating more fruits, vegetables, smaller portions and working out. Just thought I would share!

Fun Times...Long Post!

We had a great Memorial Day weekend. Some of our best friends flew in to visit and were here with us from Friday to Wednesday morning. We had such a great fun filled time while they were here. We definitly had a packed schedule.

Friday Night - Forth Worth Rodeo (This was probaly the most fun, because Davis was so excited to be a cowboy and see all of the animals)
He definitly played the part well!

We ate at Risky's BBQ for dinner. Yumm! I think that Davis enjoyed the food!

Saturday - we showed the Bass's around Frisco and took it easy before heading to the 6th Floor Museum. The 6th Floor Musuem is where President JFK was shot and killed. Saturday night we introduced the Bass's to our favorite mexican resturant, La Hacienda Ranch. Of course we couldn't call it a day until we had a good competitive game of Settlers of Catan!!!

The sixth window on the far right is where they believe that JFK was assassinated by Lee Harvey Oswald.

Sunday - we went to church, ate a good sandwhich at Potbelly's and then headed to Dallas to go to the Dallas Aquarium. It was a little croweded, because of the Holiday weekend, but still a great time. They have some really unique animals like the pengiuns and manatees.

Monday - We were able to go to a Rangers game thanks to the Lewis's and their parents. We had fun tailgating, a great time at the game, and great seats! Later that night we headed to Dallas to visit some of Beaty and Carrie's friends from grad. school. They actually go to our church and the husband is the youth minister at our church. So it was neat to get to know them a little bit.

Tuesday - Lindsey spent the day working and Beaty, Carrie, Davis, and Bryan spent the afternoon at the pool. It was a beautiful day for them to be outside. For our last time together we went out with a bang eating dinner at Mastergrill Steak House.

All in all we had a fabulous time with the Bass's. We miss them dearly and wish they lived here in Texas! :)

Well today I had the dreaded ingrown toenail procedure done. I have had an ingrown toenail for at least a month. (I know bad) Well, I have kept putting off this procedure, because I had one removed before when I was younger. Pretty much, I think it traumatized me about shots and needles...at least during this procedure. When I had it done before all I could remember was that shot. It was the worst shot I had ever had in my entire life. No lie. Terrible. So, being a scardy cat of this shot I decided I would take matters in my own hands. I knew what I had to do to get rid of this ingrown mess and I attempted, several times, and couldn't take it anymore! Well anyways, today was the day. I told the doctor I was terrified of the shot and I really was dreading this experience. I started sweating really bad and apparently I turned white and the doctor was afraid I was going to pass out. Ha. (Jessica, I am sure that you can relate!) The funniest part was when the doctor was cutting out the ingrown toenail, she said, "well looks like we have been doing some bathroom precedures of our own here!" HAHA! Bryan and I cracked up. It was so funny that she could tell I had been trying to get it out! ha. Well after all was said and done, I have to admit their technique was absolutely amazing! Not going to lie, it still hurt, but was a million times better. They practically froze my toe with this spray so it took away some of the pain of the actual shot. Then 2 shots, cut the edge of the nail, dig around and make sure it's all gone, bandage it up and then I am on my way. All was good until the anesthesia started to wear off! GRRRRRR! Then I could really tell that she had messed around in there. Oh well. I am glad that this will be over with in a few days and I will be back to normal! Bethany's Getting Married!!!!

We had such a great weekend in Houston. We had a special shower for Miss Bethany! We are so excited that she is getting married and hope that her engagement is amazing for her. She deserves nothing but the best. Here are a few pictures from the Luau bridal shower!

Keep looking back for updates. I have so many more pictures and stuff to talk about from the weekend. All of the Vaughn's were in Texas, Astros ballgame in style, shopping with the girls, more details and pics of the shower, and much more! I only 3 more weeks of school actually ONLY 4 classes left for this semester! Oh my gosh. I am so ready, but when those classes are over I will be back on top of blogging.

We are so excited for Seth and Jessica Lewis. Even though Eli wasn't born on my birthday I will still love him just the same! I will have to teach him about the term "birthday week!" Eli Vick Lewis is soo stinkin cute! We just love Seth and Jessica and especially love their boys! Eli was so cute and snuggly! Jessica looked great after having Eli! And Caleb was so sweet when he first met Eli. What a great big brother. Can't wait to spend more time with Eli and Caleb of course.

Birthday week continued!

Bryan planned a great weekend. He made reservations at Maggianos for us, my mom and Rex, Amber, Steve and Jacob. After eating at my favorite place we headed back to our apartment for some cookie cake and cookies and cream ice cream! YUMMY! (looks like I will have to be working out every day this week! ha) It was a great way to end a great week.

25 Years Old!

Whoa! I can't believe that I am 25 years old. Holy Cow. How time has flown! I think that the day after birthdays are pretty much the saddest days! ha. Because you have all this fun, surprises, presents, cake/cupcakes, lots of phone calls, lots of messages on facebook ect and then the day after back to normal. Just not as much fun. So this year I decided it was the year of the birthday week. That way I can spread my birthday over the week. I felt I was worth it...I just had to get Bryan on board! Well, I just have to say that he is pretty much amazing. He has made this week totally amazing. What husband has the nerve to buy a swim suit and cover-up, new dress and they actually look amazing on and fit perfectly. Ha! I was in shock. It was such a surprise and I told him that he saved me a lot of heartache by him buying the bathing suit! I usually go and try on 50 million and end up leaving with tears! ha. So it really worked out nicely. I asked how he knew what to get and he said, "I just pay attention to what you have been wanting and what you like!" So sweet. So needless to say he has made this a great birthday. So has everyone else, family and friends. You all made it so special! Thank you. Here are a few pictures from the birthday week! :)

Crazy Life

Well...It has been forever since we have posted on here. Let me just tell you that our lives have been insanely busy. Late night studying everyday...Working part time...Bryan working late it has been just crazy. Last weekend I flew out to NC and had a great time. It was a whirlwind of a trip though. My great grandmother turned 85 years old! We had a big party for her. It was a lot of fun. I have missed posting about some really good things like, the rodeo and her party...maybe I will try and back track this weekend and get some pictures up. We will see!

What in the world. The bachelor or the bachelorette never pick the right woman/man...He should have picked Molly. What in the world was he thinking? I just don't understand.

Oh snap....I am watching the after the rose ceremony and he just said we aren't right for each other (talking about Melissa and him) Whoa... didn't think this was going to happen.

Maybe he is going to tell Molly that he loves her...we will see...I have to keep watching! This has gotten good! gotta go! :)

Need to Laugh?

So this morning to start things off, as I was packing my book bag for school I noticed that I didn't have an article printed off that I needed for class. So I quickly went to the computer, thank goodness I had emailed myself a link to the article right? Wrong, since it was a pdf file through a database from the universities website it would not open. Well great. So I had to re-search for an article, very quickly, because it had already passed the time when I should have left. Luckily within 10 minutes I was able to pull up an article and print it off and head to Arlington. Well, when I started the car the gas was pretty low. About to be in the yellow! So I was going to pull off and fill up, but by the time I started driving a little ways the gas meter moved up, so that it was at a 1/4 of a tank. So I thought to myself, I have plenty of gas. Wrong. But still I decided to head out and get on down the road. There are 2 really bad stop lights that cause major traffic and I was just worried about getting through those since I was running late, because of bad preparation for class. Well I get to the lights and I am sitting in terrible traffic waiting for the light to turn green and all of a sudden the gas meter goes down below the yellow line (like as far as it can do down) and the low fuel light comes on. I don't freak out yet, it's just the first time I have seen the low fuel light before, but when I hit the gas it went up as far as it can to being full. So, while waiting at these 2 lights the gas meter continues to rise and fall to the lowest and highest point it can go. I didn't think that it was a good sign at all. The car was kind of freaking out. So I made it through the lights and pulled off. Barely coasting in to the gas station. So I think things are ok now...Just get a little bit of gas and get back on the road and I can still make it to class on time. Well....wrong again. I didn't have my wallet, no money, no NOTHING. WOW. I begged the cashier to let me give him my debit card over the phone and he didn't like that idea. So I had to call Bryan to come and save the day. Meanwhile I contemplated asking people if they would be kind enough to fill up my car and I would mail them a check. (but never went through with it) Needless to say he had to drive to meet me about 30 mins away from our house to put gas in my car and give me my wallet. After all was said and done I made it to class 30 minutes late, with the wrong article, but with a full tank of gas and my wallet!

Oh my gosh. So I woke up Friday morning to a note on the kitchen counter. The note said, "I love you so much and since I was gone all last week we are going to spend a night with just the 2 of us." He totally took me by surprise. So, that is all I really knew. He got home early and I was just getting out the shower and I went into the bedroom and saw our suitcase sitting on the bed with a note in it. I opened the suitcase and in it and there was a piece of paper that said 1 romantic night for 2 and it was a receipt for 1 night at the Gaylord Texan Resort . OH MY GOSH. WOW. My husband is soo awesome. He is so romantic and thoughtful. I was so surprised. (And if you didn't know, I love surprises) We had the greatest time walking around and enjoying the hotel as well as our fabulous meal at Ama Lur. We ate the best sea bass and enjoyed yummy chocolate cake. It was a nice, fun get away! He is the best!

Nope you didn't read it wrong. It's not supposed to be R&R (i wish it was), but it is S&S. Are you wondering what that is???

SATURDAY & SICK....Yep it's pretty lousy. Woke up with a terrible headache, stuffy head, but runny nose (don't ask me how you can have both), achy body, and sore throat. Just the way I wanted to spend my Saturday. Oh well.

So needless to say, I am just taking it easy. I stayed in bed today till around 12pm just watching movies.(And I went to bed at 8:45 last night!) I finally ventured into the rest of the house grabbed some Vitamin C and a shower and things have started looking up. We will see how the rest of the day goes.

I think I am just sick of Bryan not being home! :)

We brought in the New Year in NC at Eric and Anne Michelle's house. It was a night full of smores over the fire pit, a little game called mafia, and the count down to the new year.

I can't believe that Bryan and I have been married for 1 whole year. I guess I can't believe it, because we have had so many changes within our first year of marriage. Moving in together, job changes, graduate school, more job changes and moving to Texas. It has definitely been an eventful year for the 2 of us. One of growth, new experiences, and adventure. December 29th, 2007 I married the man of my dreams. I couldn't imagine a day without him. Thank you Bryan for loving me unconditionally and I look forward to many, many more anniversaries together.

For our anniversary we went to Wilmington. We went to the Mayfare center and saw a movie and walked around the shops while drinking my favorite, pumpkin spice latte from Starbucks! Then we checked into our bed and breakfast. We stayed at the Front Street Inn in downtown, historic Wilmington. We had a great, relaxing time. Bryan was feeling a lot better and probably the first day that he had felt more like himself.
